Tropical Smoothie!

We're in Marfa! We started our long road trip a little over a week ago and have been spending our time checking out the food scene and trying ALL THE THINGS that Texas has to offer. To be honest, the only real problem we actually foresee with this road trip is how our bodies will handle the constant onslaught of new foods we'll need to try. But, like, worth it. Right? 

Anyhow (perhaps having a premonition of our unhealthy eating habits?) the kind folks at Metamucil reached out about their Two-Week Challenge - basically you try taking the psyllium super fiber for two weeks and assess how you feel - and we thought we'd give it a go! With so much not-so-great eating going on, starting the morning with one of these smoothies makes us feel at least OK about our nutrient and fiber intake. 

While we've tried out several different smoothies, this one is by far our favorite. It's bright and fresh, with tropical notes coming in from the mango and pineapple and a great orange flavor from the Metamucil. Just sweet enough to feel like a treat, but with no added sugar! 

The best thing we noticed from the two weeks of trying the added daily dietary fiber was that we felt full for much longer*. Before, we'd have breakfast and then two hours later be starving. Now we can be regular humans who have breakfast (like, this smoothie) and then don't require eating again for at least three or four hours, if not longer. The benefit of this for us is that it lets us focus on the task(s) at hand without the distraction of suddenly being starving at 10 a.m. for no reason. Metamucil also traps and removes the waste that weighs you down, so in two weeks, you can start to feel what lighter feels like.*

Tropical Smoothie

Makes 1

  • 1/2 cup chopped fresh banana 
  • 1/2 cup chopped fresh pineapple 
  • 1/2 cup frozen mango 
  • 2 tablespoons coconut milk 
  • 1 cup water 
  • 1 (5.4 gram) packet Metamucil
  • Extra fruit for garnish (optional) 

Combine all ingredients in a blender and blend until smooth. Enjoy!
