10 Things To Bake This Week!

It’s now been a week and a half of social distancing, with about 95% of our daily lives spent inside the house. We’ve gone through an emotional rollercoaster of enjoying it, hating it, feeling lonely, loving sweatpants life, and video calling all our friends to ask each other questions like “so what are you doing NOW?” Everyone seems to be in more or less the same boat, with some just a little drunker than others.
One thing that’s been making us smile is scrolling through Instagram and seeing what everyone else is doing with their free time… and it looks like pretty much everybody is baking? Like a lot of people that don’t bake are baking right now and it’s really cute. We thought we’d share ten of our favorite things to bake from this here blog, in case you’re looking for any inspiration. These aren’t organized in any special order; we love all of our little carby sugar friends equally and would never subject them to a ranked lineup. But the peanut butter layer cake is number one because that’s what we want to eat the most right now.
In general, most of the recipes below use ingredients that shouldn’t be too hard to find and will keep for a long time in the fridge or pantry, although most of them use eggs, which we’ve heard have been scarce in some places. A few of the recipes below are gluten free or have gluten free options, in which case you’ll see “GF” or “GF Option” next to the title. 1.) Peanut Butter Layer Cake with Tahini Frosting
Celebrations are still under way, even in quarantine! If you’re having a birthday party, celebrating an anniversary, or just want a fun baking project—this peanut butter layer cake is for you. It’s dense and moist and comforting, and the tahini frosting brings in a sesame element that is honestly genius, if I do say so myself.
2.) Chocolate Chunk Rosemary Cookies
The ideal snack during a Netflix binge? Yes. Crunchy on the outside, gooey and melty chocolate on the inside, with a touch of salty goodness and some rosemary to make people say “oh that’s so nice!” These cookies are abso-fucking-lutely amazing and if you’ve got access to flakey salt do NOT skip that part!!!
3.) Lemon Cracked Pepper Pound Cake(GF)
Lemond and black pepper pound cake with rosewater glaze… in 2015 Probably This was wild, y’all. This loaf cake is gluten free and full of bright flavors to make it an incredible afternoon snack with tea or 9 p.m. binge-eating on the couch session.
4.) Thai Lime Tart
Inspired by Thai flavors done in a very American way, this baddie is incredible and weird take on a key lime piece. It’s crunchy and tangy and creamy and sweet! This can also get made as bars in a 9x9” square pan if you want to make it even easier!
5.) Single Bowl Peanut Butter Banana Bread(GF Option)
Our most recent baking post that’s perfect for cutting down on dirty dishes while giving you a delicious loaf of peanut buttery banana bread goodness that can be stored for up to a week. Perfect for bananas that are past their prime. I recommend you make it ASAP.
6.) Raspberry White Chocolate Scones
Raspberry white chocolate goodness for breakfast or an afternoon treat. These scones are easy and fast to make, and have a gorgeous cakey texture.
7.) Blueberry & Earl Grey Scones
These were the OG scones on the blog, and to this day they’re one of our most popular recipes. They’re absolutely delicious, and if you haven’t baked with earl grey before you are in for a wonderful lil treat.
8.) Banana’s Foster Cookie Bars
Inspired by one of New Orleans’s classic desserts, Banana’s Foster, these cookie bars are decadent and literally get set on fire. If you don’t have a torch, you can skip that step, but like, you’re missing out a little bit. Creamy sugary banana cookie goodness.
9.) Almond & Orange Shortbread Bars with Poppyseed Jam (GF)
Maybe you wanna get a little bit outside the box! You ever had poppyseed jam before? We hadn’t before trying this and DAMN it is good! Almost a little spicy even, which was unexpected. Definitely a great project to take on.
10.) Cardamom Carrot Cake (GF)
The best damn carrot cake there ever was. The cardamom in the batter brings out a beautiful floral flavor, which gets even better when combined with the earl grey buttercream. It’s pretty much the ideal cake for spring.
