Roasted Blueberry + Coconut Smoothie Bowl

It's like a smoothie, but in a bowl and covered in fun stuff! Hooray!  

Over the last three weeks, we've eaten a lot (like a lot a lot) of food. A lot of it was really healthy, like the loads of sashimi and nigiri we ate in Seattle and Vancouver.  But a lot of it was not. A lot of it was tequila.  So, it's time for a detox. I would call this our attempt at getting our bodies bikini ready but honestly that ship has long sailed and at this point we're just trying not to get diabetes.

But back to our trip! We had so so so so so so much fun.  Like, actually it was the best vacation ever.  We got to do outdoorsy stuff and indoorsy stuff, explore new cities and potential future homes, and spend entire days doing nothing but eating pastries.  We met so many fun new people, and connected with some blogger friends IRL (the Food Gays are actually hilarious in person and the Yummertime boys are so so sweet!).  It left us craving adventure, more travel, and maybe even a move.  We'll see.     

For now, it's time to look forward to summer.  And that means: ANNOUNCEMENT! There are going to be some major (!!!) changes to the site.  Like major. What to expect: more life, more me, more Matt, more behind the scenes, more baked things, more non-baked things, more, more, more!  Get ExCiTeD!

Roasted Blueberry and Coconut Smoothie Bowls (makes 2 bowls)

  • 1 pint blueberries
  • 2 T honey
  • 1/4 t sea salt
  • 1 cup plain yogurt (or live on the edge and use vanilla, or strawberry!!!)
  • 1 large banana
  • 1/4 cup coconut cream
  • 1 cup ice *optional
  1. Heat your oven to 400* and place the blueberries on a cookie sheet (one with a rim so the berries don't roll off) and drizzle the honey on top. Sprinkle with the salt.  
  2. Roast the blueberries for about 10 minutes.
  3. Remove the berries from the oven and strain off as much juice as you'd like.  You can keep all of the juice, it will just make a less thick smoothie.  
  4. Place the berries, yogurt, banana, coconut cream, and ice in a blender and blend on high until smooth.  
  5. Pour the smoothie into a bowl and cover with desired toppings (listed below). 
  6. Feel the benefits of health and wellness wrap you in a warm fuzzy blanket as your insides are turned into a beautiful garden where there are no toxins and everything is perfect and you never ate that bagel.  Or something like that.  

Toppings:

Pretty much up to you, but I used coconut flakes, miniature bananas (they're sweeter and a little darker in color), alfafa sprouts, and granola.  I used Purely Elizabeth blueberry granola because it's probs my favorite granola at the moment.
